Today, I am sharing one of my family's favorite recipes.
Cheesy Chicken Enchiladas
Here is what you will need:
For the Enchiladas

3 cups chopped Cooked Chicken, I use my Salsa Chicken
2 cups shredded Monterey Jack Cheese
1/2 cup Sour Cream
1/4 cup chopped Pickled Jalapenos
1 pack Frozen Spinach, thawed and drained
8 flour tortillas
For the Sauce
8oz Sour Cream
8oz Green Salsa
Stir together the first five ingredients. Spoon mixture into the tortillas.
Roll them up and place them into a greased 9x13 dish. Bake at 350* for 35 to 40 minutes. Take out of the oven and mix sauce, pour over the top, and enjoy.
